So yeah, that's what I'll do is I'll put that turkey, I'll stuff it inside that five-gallon bucket. It's kind of like being a really large person putting on a pair of really tight pants. It's kind of fun. And it'll sit there for 24 hours. When I get it done and pull it out, I will let it just in drip dry for a bit over a sink. And then I'll use a towel, a regular hand towel, a cloth towel because it works better. And completely dry inside and out, 100%. And then at that stage is whenever I do my dry seasoning or whatever we want to put on the outside of it, we'll let it set until it's time to cook. And then of course we cook it in the Big Easy, which doesn't take very long, a couple of hours maybe. So that's how we're going to do it. Oh, I completely missed an important step. Right after I get done dry-drying it and pull it out in the tent for a while, that's whenever I inject my bird with whatever injectable you'd like to. I'm using a jalapeno butter cajun injectable this year. It's usually what I use most of the time. But I'll inject that turkey all over. And give that, because it'll sit on the counter for a few hours coming back up to room temperature. So that'll give that injectable mixture time to kind of disperse within the meat, if you will. So there you go. I hope I made somebody hungry for turkey. I don't personally care for turkey, funny enough. I will take a little bit of a bite of it just to make sure it tastes good, but other than that, I don't touch turkey unless it's in a soup. I say 73 to you all. Have a great Tuesday.
