Hopefully, I don't know what they do with the neck. Usually they cut the neck off and they put it inside a bag inside the turkey when you buy it from Butterball. But, yeah, yeah, the neck. I tell you, my dogs are like chewing on that neck. The neck of that ostrich looks like a big, you could actually probably make pork chops, not pork, but ostrich chops out of that neck if the butcher knew what he was doing.
