for about three, four hours in pineapple juice. And that breaks down some of the dense fibers and moistens the meat. And then when you throw it in the oven, of course you cover it and that kind of lets it steam away and then glaze it on the grill at the end. And I'm going to do, I think, a barbecue sauce on one set and the other rack I'll do probably like, I don't know if I'm going to do teriyaki or an orange glaze on those.
