for about 24 hours in pineapple juice. And that breaks down some of the dense fibers and moistens the meat. And then when you throw it in the oven, of course, you cover it and that kind of lets it steam away and then glaze it on the grill after the end. I think a barbecue sauce on one set and the other rack I'll do probably like, I don't know if I'm going to do teriyaki or an orange glaze on those, so we'll see what we can.
