I'll put a little bitty pat of butter on the stove, get it good hot and I'll pan fry that piece of bologna. And I'll fry me up an egg and I'll build me a fried bologna sandwich. And it's just a toasted bread, a little bit of mayo. You want to put down your bologna, slice of good cheese and an egg on top, a little salt and pepper and then the other bun. And let me tell you, that's some good eating. The other way we like to do bologna down here is we'll take the log like you're talking about. And we will score it lengthwise, a bunch of times, maybe six or eight times, all the way around it, lengthwise. And then maybe cut some circles around it too. That way you can season it and you can slow smoke it. Yeah, we're in Texas, we like to smoke everything. Anyhow, we would slow smoke it and it's really good, smoked bologna.
