And I smoked a brisket once, but it was dried out, and it didn't turn out well. So I've done a lot of research. I think I have a game plan now. But yeah, I'll pick up a brisket tomorrow at Costco. I'll probably start working on it Saturday morning. Trim the fat off as appropriate. And then something I'm going to try is I'm going to put the fat into a pan and render it down into tallow. And then I'm going to use an injector to inject some of its own fat back into the flat part of the meat, the thinner part that can tend to get dried out. And so that's the main difference I'm going to try this time. But yeah, it's a lot of planning because it's like maybe between the cooking and the raw meat.
