You have to use cold water, but you put enough to make a consistency of milk and then your drippings have to be boiling with the two cups of water and add that slower to that and that will make the best gravy you ever had. If you don't have turkey, you can always just use chicken stock and the same thing, but you wouldn't have to add the water there. But you could probably even use chicken noodle soup. You just have to have some noodles with your gravy.
