He has been cheese making. I saw a YouTube video about how easy it is, relatively easy it is, to make cheese at one's own house. So, well, we're trying our very first cheese here, which is a queso fresco out of four gallons of cheese. I don't know. This looks like maybe a six-pound block that I'm working on, a six-pound round, and I tasted some of the curds and they are delicious. So I'm really hopeful about this. It's on the cheese press now and it's getting rid of all of its way. And I'll make some ricotta with the leftover way. Anyway, I'll let you know how the project goes. Thanks for hosting Bill.
